When I went veg in the sixties, I had a hard time cooking vegetarian, because I had only the vaguest idea what to cook, or how to cook - never mind nutrition! I ate lots of cheese, bread, brown rice, broccoli and carrots, lentils - a very brown, heavy diet.
I spent the next couple of decades learning what to eat and how to cook vegetarian, while I was a stay-at-home mom. I felt hard pressed at the time, but now I'm glad I was able to do that.
These days, veggie diets are becoming main-stream, it's even cool to be vegetarian or vegan, and there's far more information and support for vegetarian diet.
But many of you have told us that cooking vegetarian is still one of the biggest challenges in going veg:
- You don't know how to cook, or don't like cooking
- There's no time or energy for cooking
- Vegetarian foods are hard to find, or too expensive
- You don't know any other vegetarians
- Living with non-vegetarians makes it hard to cook veg
That All Sounds Pretty Normal! Adopting a vegetarian or vegan diet is a major lifestyle change. It takes time and energy to absorb new information, develop new skills, and re-arrange your life.
